Baked Carrots

Yes, this is really about baked carrots. -- Not an attempt at being clever.

So I found this recipe on a website and tried it. I'm all about quick, easy, healthy (now), and tasty, so here it is.

Preheat the oven to around 375 to 400 degrees.

Cut carrots into bite size pieces or use baby carrots. I did about 2 cups of baby carrots, to fill the cookie sheet, one layer, not too crowded.

They said not to use glass.. Clay or aluminum was best. I pulled out my clay cookie sheet, very heavy, but it worked nicely.

Toss the carrots in 1 to 2 teaspoons of olive oil and a seasoning. I used an Italian blend. 1 to 2 teaspoons. I didn't measure just eyeballed to see there was some seasoning on every carrot.

Spread the carrots out on the cookie sheet single layer and bake uncovered for 25 - 30 minutes or until tender. Mine took about 30 minutes. (some of the candidates were much smaller than the rest so they did shrivel a bit. But they still tasted good. I did not flip them over, but you can if you want.

They were very tasty! Didn't need to add anything else, even when I reheated the leftovers over the next two days.

You can do this with other veggies. Carrots was just my first try. I'll branch out to other stuff and post the results here.
